As it was marked earlier, for the purpose of preventive maintenance of colloidal opacifications in the treated champagnes kupazhnyh vinomaterialah the maintenance of components of colloidal system should not exceed following values: polysaccharides - 400 mg/dm3, proteins - 8 mg/dm3 and phenolic materials - of 200 mg/dm3 [19, 67].

In the "know-how" of sparkling wines the processing scheme kulazhej, including bentonite influence in a combination to Tanninum [116] is accepted. For achievement full rozlivostojkosti kupazhirovannyh vinomaterialov, designed for effecting of the sparkling wine going for export, to various kinds of opacifications in IViV "Magarach" for ZSHV "New Light" the scheme of processing including influence of the fish glue in a combination to Tanninum with the subsequent addition of bentonite and processing by a cold [103] has been developed.

In this connection our further researches have been directed on studying of dependence of decrease in the components participating in formation of colloidal and crystal opacifications, from their initial maintenance in process posletirazhnoj endurances of the sparkling wines received with use immobilizovannyh of yeast.

Work was spent on vinomaterialah from kinds Aligote, Risling and Pino fran (processed in a white way to a mean). For achievement of various concentrations of investigated components used vinomaterialy, treated under the scheme bentonigkelatin in interrelations 1g/dal:2g/has given, and untreated.

Secondary fermentation was spent at entering 2005 mg/dm3 alginata calcium with concentration of cages 0,50,1-1,00,1 million/sm3 tirazhnoj admixtures, that
Corresponds 5 g beads immobilizovannyh yeast. Analytical indicators kjuve were defined in 6,9, 12 and 18 months of endurance.

The results of researches presented in tables 3.8,3.9 and 3.10, testify that such indicators as mass concentration of titrated and flying acids, dioksida sulfurs, the general extract practically do not variate in the course of secondary fermentation and posletirazhnoj endurances.

The basic changes concern biopolmers and wine acid. So, level of decrease in polysaccharides in kjuve in 18 months of the endurance, received of untreated vinomaterialov has averaged 21 %, and in kjuve from treated vinomaterialov - 17,5 %.

In the course of processing the initial maintenance of proteins has decreased approximately in 2 times in all vinomaterialah. Decrease in mass concentration of this component in process posletirazhnoj endurances has averaged 52 and 29 % accordingly for kjuve, received of untreated and treated vinomaterialov.

Such big difference in level of decrease in proteins at use treated and untreated vinomaterialov can be explained the following. In wines of the squirrel are present both at the free form, and in a complex with other biopolmers. In the course of processing vinomaterialov bentonite deduces labile proteins, and kompleksnosvjazannye, being in agregativnoustojchivom a state, remain and participate in the further oxidation-reduction processes [132, 174]. As to change of concentration of phenolic materials here it was not observed dependences of decrease in their maintenance on initial concentration.

Concerning wine acid it is noticed, that in all samples from untreated vinomaterialov decrease was approximately in 2 times more than in treated. The final maintenance of wine acid fluctuates in limens from 3,2 to 3,5 g/dm3 for vinomaterialov different kinds.

To similarly previous researches the augmentation of the maintenance of ions of calcium in kjuve which has averaged 17,6 % was observed.

For the purpose of studying of influence of the initial maintenance of high-molecular, phenolic bonds and wine acid on stability kjuve in the course of endurance testing for propensity to irreciprocal colloidal and crystal opacifications was held. Results of tests are presented in таблицеЗ.11.
