Explanatory note

Each people have the way of life, the customs, holidays, songs, fairy tales. Each people have favourite dishes and the traditions of a feast inherent only in it. Last years interest to the richest history of a Russian cuisine which allows to use our centuries-old culinary culture for a change today's assortment of dishes has increased. The program of discipline "Russian cuisine" is intended for professional educational institutions. As a result of studying of discipline students

Should know: history of development of a Russian cuisine, national features of preparation of various dishes, recipes and technologies of preparation of traditional Russian dishes;

Should be able: to prepare traditional Russian dishes, to observe safety precautions at preparation of dishes.

Studying of a program material should be spent taking into account modern requirements. Along with theoretical training by the program carrying out of the practical training which purpose is fastening of theoretical knowledge and formation of skills with the legal documentation is provided.

The Earth Russian from time immemorial is famous for the masters. National crafts reflect cultural traditions of the nation, outlook, mirovospijatie the people and keep historical memory. Explanatory note

The modern culture of each people leaves the roots in an antiquity. It co-operates with language, national poetic creativity, the literature music, the traditions which have developed throughout centuries. In each corner of Russia there are features of history and culture. Interest to a huge cultural heritage of the Oryol edge recently has considerably increased. The program is directed on revival of spirituality of young generation, inculcation of love to the native earth, on formation at students of representation about traditional culture Orlovshchiny as about the greatest universal value and covers three sections.

The first section is devoted folklore of the earth Oryol: to language, oral national creativity, songs, games, ceremonies, collectors of national creativity.

The second section acquaints with a traditional national suit orlovtsev, fabrics and ornaments.

«Ceremonial culture of Russia»

In culture of Ancient Russia there was a set of various ceremonies and rituals. All life of people obrjadovo has been issued. Ceremonies concern the most ancient elements of national culture and are closely connected with thinking forms, household way and economic activities of the person. This powerful means of national education and people rallying in uniform spiritual whole, uniting the people not only geographically, but also historically, forming the strong communication leaving deep into of times. Despite their transformation in a modern life, they continue to remain an inseparable part of a spiritual life of a society. Ceremonies make a basis of Russian national culture.

The ceremony consists of following components:

-Symbolical action or ritual behaviour of participants of a ceremony;

- Ritual food;

- Ceremonial poetry in verbal and musical expression.

Therefore studying of traditional ceremonial culture on circle employment is organised on a spiral on the same material with gradual and constant complication of a material.

Main objective of work of a circle - education of respect for traditional culture of the people, aspiration to the further knowledge and the vigorous activity on its studying and preservation.

The program rschitana for 2 years of training (158ч.). Employment are spent once a week on 2 class periods. The basic accent of the program becomes on performance of a practical training (preparation of dishes, learning and execution of ceremonial poetry, a performance ritual actions) by which it is taken away about 80 % of time.

Manufacturing of a national doll and embroidery - one of the most ancient and widespread kinds of arts and crafts.

Russian national embroideries are very various. Schetnye embroideries the most ancient. Such embroideries concerns Oryol spis. The unique embroidery was known in many edges, but met in Oryol is more often.

National dolls were created in all villages and cities of the Oryol province. Isstari was considered, that dolls can cause a crop, the riches, happy marriage, to influence sort continuation.

Studying of an embroidery and national dolls as to a part of a spiritual and material heritage of the people promotes education of respect for its history and traditions, patriotism.

The program purpose: aesthetic and patriotic education of students on an example of art traditions of Russian people, training to the basic receptions of needlework, characteristic for different provinces of Russia, acquisition of experience of research activity on ancient culture of national needlework.

Program problems: to learn children to art of embroidery and manufacturing of national dolls, the careful relation to Russian culture, to Russian life.

In the course of training students

Should know: history of an embroidery and manufacturing of national dolls; principal views of an embroidery and dolls; equipment of technological process; kinds of seams; manufacturing techniques of various dolls and embroidery. Should be able: to carry out the elementary stitches, to read schemes, to carry out an embroidery under the account of threads, to make national dolls.

The program is calculated on two years of training. The first year is devoted manufacturing of national dolls and development of technics of the elementary seams. On the second year students pass to development of technics Oryol spisa. Employment are spent two times a week for 4 hours.

Following the results of circle work exhibitions of works of students will be organised.
